Champagne Cake Recipe

Cake Recipe

1 box french vanilla cake mix
2 envelopes dream whip
4 egg whites (save 2 yolks for the filling)
1 egg
1/4 cup vegetable oil
1 1/4 cup strong champagne (I use Cook's Brut)

Beat all ingredients together in a mixer for 3 minutes. Pour into greased, floured pans. Bake at 350 until done.

Filling
1/2 cup sugar
2 tablespoons corn starch
1/8 tsp salt
2 cups milk
2 egg yolks, slightly beaten
2 tablespoons margarine or butter, softened
2 tsp vanilla

Mix sugar, cornstarch and salt in 2-quart saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir at least half of the hot mixture gradually into egg yolks: stir into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in margarine and vanilla. Refrigerate.

Topping

2 pints whipping cream
3 tablespoons powdered sugar
1 tsp vanilla

Beat until stiff.

Thanks, Carolyn. I'm going to try to make this before Ted's birthday, when there's no pressure (although I don't know *when* there won't be pressure between now and the middle of next month). If he likes it, this could be his new birthday cake. His favorite now is red velvet cake with whipped cream icing, and I jusr CANNOT make a decent red velvet cake. So I buy it and feel bad.
